Margarita Anyone?!

The Early Bird Special (Thanks Tary!)

These turned out awesome and the kids gobbled them up!
I used the following:

10 Large Eggs
1lb Center Cut Bacon
Salt & Pepper to Taste
1 Cup Cheddar Cheese (You can use any kind you like)


I like to cook my bacon in the oven....no spattering mess to deal with at all ! You first need to line your cookie sheets with foil and lay the bacon on... put it into a COLD oven...set it to 400 degrees and let it cook about 7-8 minutes.. Just until it's brown but not crispy.


 Then take 3 or 4 piece of bacon and cut it into thirds and place those in the bottom of the muffin pan (make sure you spray it with Pam first). Then take one piece of bacon and wrap it around the inside of each cup.


Each cup gets one egg. Add salt and pepper to taste and add your cheese.
Bake at 400 degrees for 15-20 minutes. Here in Utah it took 18 minutes :)

Grilled Hawaiian Chicken




Ingredients

  • 6 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
  • 1 cup Hawaiian style marinade
  • 6 pineapple rings
  • 6 slices provolone cheese
  • 6 onion rolls, split
  • 6 tablespoons thousand island salad dressing
  • 6 leaves romaine lettuce
  • 6 slices tomato

Directions

  1. Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.
  2. Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.
  3. Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.
  4. To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.

Easy Summer Cooking!

Ok so it's a nice summer day today in Utah. Not too hot, but I didn't want to heat up the whole house by using the oven. So for dinner tonight I am making Crock Pot Mac and Cheese, Polish Sausage on the grill and a crock pot cake! (I had no clue you could bake in a crock pot!)




Crock pot Cake

1 cake mix, any brand any flavor (I ued Duncan Hines Devil's Food Cake)

1 small box instant pudding; use the same flavor as the cake (Jello Brand Chocolate)
12 ounces sour cream
4 eggs
3/4 cups oil
1 cup water
Spray inside of crackpot with nonstick cooking spray.


Mix all ingredients together and pour in crock pot. Cook on low for about 6 hours. Turn crock pot off and let sit for about 1 to 2 hours. Then you can flip it out onto a plate. If you do not let it cool long enough before taking it out of the crock pot half of it stays in the crock. This cake turns out so moist that you don't have to frost it, but of course you can if you like! :)

The World's Greatest Cinnamon Rolls!

Move over Cinnabon! I will never have to submit to you high prices again now that I have found this recipe!!!


Ingredients

  • 5 cups all-purpose flour
  • 1 (18.25 ounce) package yellow cake mix
  • 2 (.25 ounce) packages quick-rise yeast
  • 2 1/2 cups warm water (120 to 130 degrees F/50 degrees C)
  • 1/4 cup butter, melted
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • FROSTING:
  • 6 tablespoons butter, softened
  • 3 cups confectioners' sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons milk


Directions

  1. In a mixing bowl, combine 4 cups flour, dry cake mix, yeast and warm water until smooth. Add enough remaining flour to form a soft dough. Turn onto a lightly floured surface; knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 45 minutes.
  2. Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each portion into a 14-in. x 10-in. rectangle. Brush with butter; sprinkle with sugar and cinnamon. Roll up jelly-roll style, starting with a long side. Cut each roll into 12 slices; place cut side down in two greased 13-in. x 9-in. x 2-in. baking pans. Cover and let rise until almost doubled, about 20 minutes.
  3. Bake at 400 degrees F for 10-15 minutes or until golden brown. Cool for 20 minutes. For frosting, in a mixing bowl, cream butter, confectioners' sugar and vanilla. Add enough milk to achieve desired consistency. Frost warm rolls.
